Modern Pastry recipe: Light Ricotta cream: 80gr Sicilian Cassata, 100gr Ricotta cheese, 300gr Sugar, 400gr Mounted Cream, Essenza di canella Elenka
438 CASSATA PASTE - paste preparation 2 x 6 kg
In contrast to the Sicilian Cassata this paste does not contain candied fruit. It can also be used to make gelato, cannoli cream, cassata cakes and mousse. Candied fruit can be added.
